Świeżutkie krewetki na pierzynce ze skwierczącej cebulki.

Dlaczego warto jeść krewetki ? To najpopularniejsze skorupiaki z frutti di mare. Są cenione nie tylko ze względu na wyśmienity smak, ale również wartości odżywcze oraz niską kaloryczność. Zawierają witaminy z grupy B, jod, wapń, selen, cynk, trochę żelaza, niestety mogą podnosić poziom cholesterolu, choć z dobrze dobranymi dodatkami możemy tego uniknąć.

W sklepach coraz łatwiej jest kupić świeże skorupiaki do czego Cię gorąco zachęcam. Kupując je zwracajmy uwagę na zapach – powinny pachnieć morzem i wodorostami. Ponadto pancerzyk (skorupka) powinna ściśle przylegać do korpusu, nie powinny mieć żadnych przebarwień. Wybór świeżych owoców morza to ważna sprawa – nieświeże mogą nam poważnie zaszkodzić.

Nie trzeba być mistrzem patelni, aby przyrządzić przepyszne krewetki. Oto mój ulubiony sposób.

 

Czas przygotowania: około 30 minut

2 porcje

 

Składniki:
– ½ kg krewetek
– 2 średnie cebule
– 2 ząbki czosnku
– sok z połowy cytryny
– kieliszek białego wina
– mały kawałek ostrej papryczki
– ½ płaskiej łyżeczki kurkumy
– ½ płaskiej łyżeczki pieprzu cayen
– natka pietruszki- kilka gałązek
– sól i świeżo mielony pieprz do smaku
– oliwa z oliwek do smażenia
Przygotowanie:

KROK 1:
Krewetki myjemy, odcinamy ogonki (odwłoki). Zdejmujemy pancerzyki. Delikatnie rozcinamy grzbiet i usuwamy z nich ciemną niteczkę biegnącą wzdłuż całego odwłoka (patrz zdjęcia). Jeszcze raz dokładnie myjemy.

KROK 2:
Wyczyszczone i umyte krewetki skrapiamy sokiem z cytryny i dodajemy do nich posiekaną papryczkę chili (oczyszczoną z pestek). Odstawiamy na 30 minut do lodówki – może być dłużej.

KROK 3:
Czosnek obieramy i kroimy w małe kawałeczki, cebulę kroimy w kostkę. Na patelni rozgrzewamy oliwę z oliwek. Najpierw podsmażmy czosnek. Gdy zacznie się delikatnie przyrumieniać, dodajemy cebulę. Podsmażamy  3-4 minuty.

KROK 4:
Następnie wrzucamy krewetki razem z sokiem z cytryny i papryczką. Dodajemy kurkumę i pieprz cayen. Smażymy z każdej strony około 3 minut, aż uzyskają różowy kolor.

KROK 5:
Następnie wlewamy wino i czekamy, aż odparuje. Dodajemy sól (najlepiej morską) i świeżo mielony pieprz. Na koniec dodajemy posiekaną natkę pietruszki.

Podajemy z kawałkiem świeżutkiego pieczywa. Dla mnie – mistrzostwo świata w smaku 🙂
